- Rinse the rice under cold water until the water runs clear and drain well.
- Combine the rinsed rice with vegetable broth or water and a pinch of salt. Bring to a boil, then simmer for 15-20 minutes.
- Remove from heat and let the rice rest for 5 minutes, then fluff with a fork.
- While the rice is resting, peel and dice the mango, zest and juice the lime.
- Combine the fluffy rice, diced mango, lime zest, lime juice, and cilantro in a bowl. Drizzle with oil and mix gently.
