Method
 

Step-by-Step Instructions
  1. Rinse the rice under cold water until the water runs clear and drain well.
  2. Combine the rinsed rice with vegetable broth or water and a pinch of salt. Bring to a boil, then simmer for 15-20 minutes.
  3. Remove from heat and let the rice rest for 5 minutes, then fluff with a fork.
  4. While the rice is resting, peel and dice the mango, zest and juice the lime.
  5. Combine the fluffy rice, diced mango, lime zest, lime juice, and cilantro in a bowl. Drizzle with oil and mix gently.
  6. Season with salt and pepper to taste and serve garnished with lime wedges and extra cilantro.
