For the Chicken
  • 4 pieces Boneless Skinless Chicken Breasts
  • 1/4 cup Maple Syrup can substitute with honey
  • 2 tablespoons Dijon Mustard yellow mustard can be used in a pinch
For the Vegetables
  • 2 cups Cubed Sweet Potatoes red-skinned potatoes are an alternative
  • 2 cups Halved Brussels Sprouts can substitute with broccoli florets or green beans
  • 2 tablespoons Olive Oil can use avocado oil for higher smoke point
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Cinnamon optional
  • 1 teaspoon Rosemary optional, can substitute with thyme
For the Base
  • 2 cups Brown or Wild Rice quinoa or farro can be used
For the Garnish
  • 1/4 cup Pecans or Dried Cranberries optional, almonds or raisins can be used

Method
 

Preparation Steps
  1. Preheat your grill or a large skillet over medium heat. Coat the chicken breasts with maple syrup and Dijon mustard, then grill or pan-sear for 6-7 minutes per side until golden brown and cooked through.
  2. Preheat your oven to 400°F (200°C). Cube sweet potatoes and halve Brussels sprouts. Toss in olive oil, salt, and optional seasoning, then roast for 25-30 minutes, stirring halfway.
  3. Prepare the rice according to the package instructions until fluffy.
  4. Assemble the bowls by starting with rice, slicing the glazed chicken on top, and adding roasted vegetables.
  5. Drizzle additional maple-Dijon sauce if desired and garnish with pecans or cranberries.
