- In a medium bowl, combine Greek yogurt, lemon juice, grated cucumber, dill, salt, and pepper. Mix thoroughly and refrigerate for at least 15 minutes.
- Heat a large skillet over medium heat. Add olive oil, then sauté minced garlic for about 30 seconds. Add ground beef, breaking it apart, and cook until browned, about 5-7 minutes.
- Stir in oregano, cumin, paprika, salt, black pepper, and optional cayenne. Cook for another 2-3 minutes until spices are fragrant.
- Preheat the oven to 350°F (175°C). Wrap pita bread in foil and warm in the oven for about 5 minutes.
- Assemble your gyros by placing seasoned beef in the center of warm pita. Top with red onion, tomato, lettuce, and tzatziki.
- Sprinkle feta cheese on top if desired. Serve immediately with extra tzatziki on the side.
