For the Chicken
  • 1 pound Chicken Breasts cut into thin slices for quick cooking
  • to taste Kosher Salt
  • to taste Black Pepper
  • 1 teaspoon Granulated Garlic or fresh garlic for stronger flavor
  • 1 teaspoon Dried Oregano or Italian seasoning as a substitute
For the Skillet
  • 1 tablespoon Extra Virgin Olive Oil for cooking
  • 1 medium Onion yellow or white onion works best
  • 2 cloves Garlic Cloves freshly minced
  • 1 cup Orzo Pasta can be replaced with rice for gluten-free
  • 2 cups Water or chicken broth for better flavor
  • 2 tablespoons Fresh Lemon Juice or lime juice as a substitute
  • 1/2 cup Sundried Tomatoes can use fresh tomatoes for moisture
  • 1/2 cup Kalamata Olives or green olives if preferred
Toppings
  • 1/2 cup Feta Cheese optional but recommended; goat cheese is a substitute
  • to taste Parsley for garnish
  • to taste Dill for garnish

Method
 

Step-by-Step Instructions
  1. Slice the chicken breasts into ¼-inch thick pieces, season with kosher salt, black pepper, granulated garlic, and dried oregano. Let marinate.
  2. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add marinated chicken in a single layer, cooking for 2-3 minutes per side until golden brown. Remove and set aside.
  3. Lower the heat, add the remaining olive oil, sauté onion for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  4. Stir in the orzo pasta, pour in water and lemon juice, and bring to a simmer. Cook for 3-4 minutes until liquid starts to absorb.
  5. Return chicken to the skillet with sundried tomatoes and olives, stir, cover, and simmer on medium-low for 10-12 minutes until orzo is tender.
  6. After cooking, sprinkle with black pepper, top with feta, parsley, and dill. Serve warm.
