  • 1/2 cup Breadcrumbs whole wheat or omit
  • 1 large Egg or flax egg

For the Tzatziki Sauce (optional)
  • 1 cup Greek Yogurt low-fat optional
  • 1/2 cup Grated Cucumber squeeze out excess moisture
  • 1 clove Garlic minced
  • 1 tbsp Lemon Juice fresh
  • 2 tbsp Fresh Dill or dried
  • to taste Salt
  • to taste Pepper

Step-by-Step Instructions
  1. Begin by finely chopping the fresh herbs, garlic, and onion. Set them aside for easy access.
  2. In a large mixing bowl, combine the lean ground chicken with the chopped herbs, garlic, onion, breadcrumbs, egg, and spices. Mix gently until just combined.
  3. Shape the mixture into approximately 24 equal-sized meatballs, about 1.5 inches in diameter, and place them on a lined baking sheet.
  4. Preheat your oven to 400°F (200°C) and bake the meatballs for about 20-25 minutes until golden brown and cooked through.
  5. While the meatballs are baking, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill in a bowl for the tzatziki sauce. Chill until serving.
