Ingredients
  

For the Chicken Filling
  • 1 pound Ground Chicken Can substitute with ground turkey or lamb.
  • 1 teaspoon Oregano Fresh is ideal; dried works too.
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
For the Spicy Lemon Honey Feta Cream
  • 8 ounces Feta Cheese Block feta is recommended.
  • 2 tablespoons Honey Can replace with a keto sweetener.
  • 2 tablespoons Lemon Juice Use fresh lemon juice for best flavor.
  • 1 tablespoon Olive Oil Avocado oil can be used.
For the Wrap Assembly
  • 4 pieces Tortillas Gluten-free options can be used.
  • 2 cups Romaine Lettuce Can substitute with kale or collard greens.
  • 1 cup Cucumber Bell peppers or radishes are great substitutes.

Method
 

Preparation
  1. In a mixing bowl, combine room-temperature feta cheese, lemon juice, honey, and olive oil. Blend until smooth and creamy.
  2. Heat a non-stick skillet over medium-high heat and cook the ground chicken for 10-12 minutes, seasoning with oregano, cumin, and garlic powder.
  3. Heat each tortilla in a dry skillet for about 20 seconds on each side to make them pliable.
  4. Lay a tortilla flat, add romaine lettuce, cooked chicken, drizzle spicy feta cream, and add cucumber slices. Fold and roll tightly.
  5. Slice the assembled wrap in half and serve immediately.
