- Begin by flaking your cooked salmon or draining canned salmon into a large mixing bowl. Use a fork to break it up into smaller pieces, ensuring it’s well separated.
- Add in the egg, breadcrumbs, chopped parsley, minced garlic, diced red onion, lemon zest, lemon juice, oregano, red pepper flakes, salt, and black pepper. Mix it all together gently with your hands or a spatula.
- Scoop the mixture and shape it into 4 to 6 patties, each about ¾ inch thick. Place them on a plate as you work.
- For firmer patties, refrigerate them for 15-20 minutes.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add your patties, cooking them for 3-4 minutes on each side until golden brown.
