  • 2 lbs chuck roast or sirloin tips or flat iron steak as a substitute
For the Potatoes
  • 1.5 lbs baby potatoes (Yukon gold or red) halved
For the Cowboy Butter Sauce
  • 0.5 cup unsalted butter softened; olive oil is a good alternative
  • 4 cloves garlic minced
  • 2 tbsp Dijon mustard substitute with yellow mustard if necessary
  • 2 tbsp lemon juice or vinegar in a bind
  • 2 tbsp fresh parsley chopped; dried can be used in smaller amounts
  • 1 tbsp fresh chives chopped; scallions can be substituted
  • 1 tsp paprika smoked paprika enhances the flavor
  • 0.5 tsp red pepper flakes can be adjusted or omitted
  • 1 tsp salt size can be modified based on preference
  • 0.5 tsp black pepper white pepper is a suitable substitute
  • 0.25 cup beef broth or vegetable broth for a lighter flavor

Method
 

Step-by-Step Instructions for Cowboy Butter Steak
  1. In a mixing bowl, combine all ingredients for the cowboy butter and mix thoroughly until well blended.
  2. For enhanced flavor, sear the steak in a skillet for 2-3 minutes on each side until browned.
  3. Layer the halved baby potatoes at the bottom of the slow cooker.
  4. Place the seared steak directly on top of the potatoes in the slow cooker.
  5. Spoon the cowboy butter over the top of the steak and potatoes.
  6. Pour beef broth around the edges of the slow cooker.
  7. Cover and slow cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  8. For a thicker sauce, mix cornstarch with water and stir into the slow cooker during the last 30 minutes.
  9. Once cooked, transfer to a serving platter and garnish with additional chopped parsley.
