- Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking pan.
- In a large bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla until smooth.
- Stir in the grated carrots, grated zucchini, and walnuts into the wet mixture.
- In another bowl, mix the flour, baking powder, baking soda, and grated ginger.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Spread the batter evenly in the prepared baking pan.
- Bake for about 25 minutes, or until a toothpick comes out clean.
- Allow the bars to cool completely in the pan on a wire rack.
- In a bowl, beat together the cream cheese, powdered sugar, lemon zest, and lemon juice until fluffy.
- Frost the cooled bars with the lemon cream cheese frosting and cut into squares.
