Ingredients
  

For the Batter

  • 1 cup Grated Carrots Fresh grated for maximum flavor.
  • 1 cup Grated Zucchini Medium zucchini is ideal.
  • ½ cup Chopped Walnuts Optional; can be omitted.
  • 1 ½ cups Flour Use all-purpose or gluten-free blend.
  • 1 teaspoon Baking Powder Ensure it's fresh.
  • ½ teaspoon Baking Soda Ensure it's fresh.
  • 2 teaspoons Grated Ginger Can be substituted with ground ginger.
For the Lemon Cream Cheese Frosting
  • 8 ounces Cream Cheese Use at room temperature.
  • 1 cup Powdered Sugar Adjust to taste for sweetness.
  • 1 tablespoon Lemon Zest Fresh zest preferred.
  • 2 tablespoons Lemon Juice Fresh lemon juice encouraged.

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking pan.
  2. In a large bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla until smooth.
  3. Stir in the grated carrots, grated zucchini, and walnuts into the wet mixture.
  4. In another bowl, mix the flour, baking powder, baking soda, and grated ginger.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake for about 25 minutes, or until a toothpick comes out clean.
  8. Allow the bars to cool completely in the pan on a wire rack.
  9. In a bowl, beat together the cream cheese, powdered sugar, lemon zest, and lemon juice until fluffy.
  10. Frost the cooled bars with the lemon cream cheese frosting and cut into squares.

Notes

Squeeze grated zucchini and carrots to remove excess moisture. Store leftover bars in an airtight container in the fridge for up to 5 days.
