Ingredients
  

For the Marinade
  • 1 cup Greek Yogurt substitute with coconut yogurt for a dairy-free option
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice fresh juice preferred
  • 4 cloves Minced Garlic remove green sprouts for milder taste
  • 2 teaspoons Cumin
  • 2 teaspoons Coriander
  • 1 teaspoon Cardamom do not swap out
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cayenne Pepper adjust to taste

For the Protein
  • 1 pound Chicken Thighs preferred for juiciness and flavor retention
For the Garlic Sauce
  • 4 cloves Minced Garlic use fresh garlic for best results
  • to taste Salt adjust to taste
  • 1/2 cup Olive Oil gradually added while mixing
  • 2 tablespoons Lemon Juice can be adjusted for tanginess
  • to taste Ice Water to thin sauce if needed

Method
 

Preparation
  1. Whisk together Greek yogurt, olive oil, and lemon juice until smooth and creamy.
  2. Add minced garlic, cumin, coriander, cardamom, smoked paprika, turmeric, cinnamon, cayenne, salt, and black pepper.
  3. Coat the chicken with the marinade and refrigerate for at least 3 hours or overnight.
  4. Combine minced garlic with a pinch of salt in a food processor; add olive oil and lemon juice.
  5. Cook marinated chicken in a hot skillet for 3-4 minutes on each side until charred.
  6. Serve the chicken in pita bread, drizzle with garlic sauce, and add toppings as desired.
