Instructions
  1. Preheat your oven to 350°F (176°C) and grease a 9-inch pie plate. Scatter cranberries at the bottom.
  2. Sprinkle 1/2 cup of granulated sugar over the cranberries and add chopped pecans. Set aside.
  3. Beat 1 cup of softened unsalted butter with 1 cup of sugar until creamy and smooth.
  4. Mix in almond or vanilla extract and then add two room-temperature eggs, beating until fluffy.
  5. Gradually add in 1 cup of flour mixed with a pinch of salt until just combined.
  6. Spread the thick batter evenly over the cranberries and nuts, leveling it gently.
  7. Bake for 45-50 minutes until golden and a toothpick comes out with a few moist crumbs.
  8. Let the pie cool for at least 20 minutes before slicing.
