- Preheat your oven to 350°F (176°C) and grease a 9-inch pie plate. Scatter cranberries at the bottom.
- Sprinkle 1/2 cup of granulated sugar over the cranberries and add chopped pecans. Set aside.
- Beat 1 cup of softened unsalted butter with 1 cup of sugar until creamy and smooth.
- Mix in almond or vanilla extract and then add two room-temperature eggs, beating until fluffy.
- Gradually add in 1 cup of flour mixed with a pinch of salt until just combined.
- Spread the thick batter evenly over the cranberries and nuts, leveling it gently.
- Bake for 45-50 minutes until golden and a toothpick comes out with a few moist crumbs.
- Let the pie cool for at least 20 minutes before slicing.
