Ingredients
  

For the Pasta
  • 8 ounces Rotini Pasta Can swap for fusilli or penne
  • 12 ounces Smoked Sausage or Kielbasa Spicy Italian or turkey sausage recommended
For the Sauce
  • 2 tablespoons Butter
  • 3 cloves Minced Garlic Fresh garlic preferred
  • 2 cups Chicken Broth Low-sodium recommended
  • 1 cup Milk Half-and-half or dairy-free alternatives are good substitutes
  • 1 packet Ranch Seasoning
  • 1 cup White Cheddar Cheese Other options like mozzarella or gouda can also be used
For the Veggies
  • 2 cups Baby Spinach Other leafy greens can work
  • 1 cup Chopped Roasted Red Peppers Fresh peppers are fine too
For the Finish
  • 2 tablespoons Olive Oil Vegetable oil is a substitute
  • to taste Salt and Pepper Adjust according to taste

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add sliced smoked sausage or kielbasa and sauté for about 3–5 minutes until browned and crispy.
  2. Remove sausage from the skillet and set aside. In the same pan, reduce heat to medium and melt 2 tablespoons of butter. Add 3 cloves of minced garlic and sauté for about 30 seconds.
  3. Pour 2 cups of chicken broth into the skillet, scraping the browned bits off the bottom. Stir in 1 cup of milk and 1 packet of ranch seasoning, then simmer.
  4. Add 8 ounces of dry rotini pasta, stir and cover. Cook for 12–15 minutes over medium-low heat until pasta is al dente.
  5. Lower heat and mix in 1 cup of shredded white cheddar cheese, stirring until melted.
  6. Stir in 2 cups of baby spinach and 1 cup of chopped roasted red peppers, returning the browned sausage to the skillet.
  7. Taste and season with salt and pepper as desired. Optionally, toss in chopped parsley.

Notes
