Step-by-Step Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add sliced smoked sausage or kielbasa and sauté for about 3–5 minutes until browned and crispy.
- Remove sausage from the skillet and set aside. In the same pan, reduce heat to medium and melt 2 tablespoons of butter. Add 3 cloves of minced garlic and sauté for about 30 seconds.
- Pour 2 cups of chicken broth into the skillet, scraping the browned bits off the bottom. Stir in 1 cup of milk and 1 packet of ranch seasoning, then simmer.
- Add 8 ounces of dry rotini pasta, stir and cover. Cook for 12–15 minutes over medium-low heat until pasta is al dente.
- Lower heat and mix in 1 cup of shredded white cheddar cheese, stirring until melted.
- Stir in 2 cups of baby spinach and 1 cup of chopped roasted red peppers, returning the browned sausage to the skillet.
- Taste and season with salt and pepper as desired. Optionally, toss in chopped parsley.
