Method
 

Preparation Steps
  1. In a medium saucepan, combine orange juice, honey, minced garlic, and chopped rosemary. Heat over medium, simmering for 15-20 minutes until reduced by two-thirds. Strain and stir in lemon juice and orange zest.
  2. Bring salmon fillets to room temperature for 15 minutes. Pat dry, then season with sea salt and black pepper.
  3. Heat a large skillet over medium-high heat with olive oil. Place salmon skin-side down and cook for 4-5 minutes until crispy.
  4. Flip the salmon and sear the fleshy side for 2-3 minutes. Brush half of the glaze over the top and transfer skillet to a preheated oven at 400°F, baking for 6-8 minutes until cooked through.
  5. Brush remaining glaze over salmon 2 minutes before finishing baking. Rest for 2-3 minutes before serving.
