Preparation Steps
- In a medium saucepan, combine orange juice, honey, minced garlic, and chopped rosemary. Heat over medium, simmering for 15-20 minutes until reduced by two-thirds. Strain and stir in lemon juice and orange zest.
- Bring salmon fillets to room temperature for 15 minutes. Pat dry, then season with sea salt and black pepper.
- Heat a large skillet over medium-high heat with olive oil. Place salmon skin-side down and cook for 4-5 minutes until crispy.
- Flip the salmon and sear the fleshy side for 2-3 minutes. Brush half of the glaze over the top and transfer skillet to a preheated oven at 400°F, baking for 6-8 minutes until cooked through.
- Brush remaining glaze over salmon 2 minutes before finishing baking. Rest for 2-3 minutes before serving.
