- In a medium saucepan, combine 1.16 lbs of peeled and chopped ripe peaches, ½ cup of sugar, and 2 cups of water. Place over medium-high heat and stir until it boils, about 5 minutes.
- Reduce the heat to low and let it simmer for 5–10 minutes, ensuring the peaches break down to create a thick syrup.
- Remove from heat and cool for 30 minutes. Strain through a fine mesh sieve into a bowl or pitcher.
- In a large pitcher, add 1 cup of the cooled peach syrup, 1/3 cup of fresh lemon juice, and 3 cups of cold water. Stir well.
