Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine all-purpose flour, rolled oats, brown sugar, granulated sugar, baking powder, and salt. Mix until well combined. Add softened butter and blend until the mixture resembles coarse crumbs.
  3. Take half of the crumb mixture and press it firmly into the bottom of a greased 9x13-inch baking dish.
  4. In a separate bowl, beat cream cheese, egg, vanilla extract, and a pinch of salt until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the crust, then layer diced fresh peaches on top, and sprinkle remaining crumb mixture over the peaches.
  6. Bake for 30 to 35 minutes, until the top is lightly browned and a toothpick inserted in the center comes out clean.
