Preparation
  1. In a large bowl, whisk together olive oil, ground cumin, paprika, turmeric, cinnamon, black pepper, salt, ground coriander, minced garlic, and lemon juice until well combined.
  2. Add the chicken thighs to the marinade, ensuring each piece is fully coated. Cover tightly and refrigerate for at least 1 hour.
  3. Preheat your grill pan over medium-high heat for 5 minutes, or set your oven to 425°F (220°C).
  4. Grill the marinated chicken thighs for 5–6 minutes on each side or roast for about 25–30 minutes, until cooked through.
  5. In a mixing bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, and a pinch of salt to prepare the garlic sauce.
  6. Once the chicken is cooked, let it rest, then slice into strips and serve in warm pitas or bowls with garlic sauce and fresh vegetables.
