Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes with a fork. Place them on a baking sheet lined with parchment paper and bake for 45-60 minutes until tender.
  2. While the sweet potatoes are baking, heat a skillet and add the ground turkey, breaking it apart while it cooks. Stir in spices and cook for about 5-7 minutes until browned. Add black beans and cook for an additional 2-3 minutes.
  3. Once the sweet potatoes are baked, allow them to cool slightly. Cut each potato lengthwise and scoop out some flesh if desired. Fill with turkey and black bean mixture.
  4. Return the assembled boats to the oven for an additional 5-7 minutes. Sprinkle cheese on top before baking until bubbly and melted.
  5. Remove from oven and let sit for a minute. Add desired toppings like avocado or sour cream before serving hot.
