- In a medium saucepan, combine 1.16 lbs of peeled and chopped ripe peaches, ½ cup of sugar, and 2 cups of water. Heat over medium-high heat, stirring frequently, until it boils, about 5-7 minutes.
- Reduce heat to low and simmer gently for 5-10 minutes until peaches soften and syrup darkens.
- Remove from heat and cool for 30 minutes. Strain the mixture through a fine mesh sieve, pressing the peaches to extract juice.
