  • 2 tbsp Fresh Rosemary or use dried sparingly
  • 1 tbsp Lemon Zest add fresh lemon juice for more acidity
  • 1 cup Breadcrumbs use gluten-free if necessary
  • 1 large Egg or flaxseed egg for vegan
  • 2 cloves Garlic minced or garlic powder
  • 1 tsp Salt
  • 1 tsp Black Pepper adjust to taste
  • 2 tbsp Olive Oil or avocado oil for higher smoke point
For Serving
  • 2 pieces Lemon Wedges
  • 2 sprigs Fresh Rosemary for garnish

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, fresh rosemary, lemon zest, breadcrumbs, egg, minced garlic, salt, and black pepper. Mix until all ingredients are thoroughly incorporated.
  2. Scoop out equal portions and shape them into patties approximately 3 inches in diameter. You should have about eight patties.
  3. In a large skillet, pour enough olive oil to coat the bottom and heat over medium heat until shimmering, about 2-3 minutes.
  4. Carefully add the formed patties to the skillet without overcrowding. Cook for 4-5 minutes on one side until golden brown and then flip to cook the other side for another 4-5 minutes.
  5. Once cooked, transfer the patties to a paper towel-lined plate to absorb excess oil for about a minute.
  6. To serve, arrange the patties on a platter, garnish with fresh rosemary sprigs, and serve with lemon wedges.
