  • 1 large Egg beaten
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup Parmesan Cheese optional, can be replaced with pecorino
  • 2 tbsp Herbs (Parsley/Thyme) fresh
For the Mashed Potatoes
  • 2 lbs Potatoes Yukon Gold or Russets
  • 1/2 cup Milk adjust consistency
  • 4 tbsp Butter don't skimp on this!
For the Gravy
  • 2 cups Beef Stock
  • 2 tbsp Flour for thickening
  • Seasonings adjust to taste

Step-by-Step Instructions
  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, cheese, and herbs. Mix gently until just combined.
  2. Portion out the meat mixture and roll it into small meatballs, about 1 inch in diameter. Arrange them on a plate or baking sheet.
  3. Heat a skillet over medium heat, add oil, and brown the meatballs for 10-12 minutes until fully cooked.
  4. Remove meatballs and in the same skillet, add beef stock, whisk in flour, and simmer until thickened.
  5. Return the meatballs to the skillet, simmer for an additional 3-5 minutes, and serve over mashed potatoes.
