  • 1 pound Fresh Salmon Preferably wild-caught, skinless.
  • 1 cup Breadcrumbs Use seasoned for extra flavor.
  • 1 large Egg Fresh, for best binding results.
  • 2 tablespoons Fresh Herbs (Dill or Parsley) Chopped, feel free to swap.
  • 2 tablespoons Lemon Juice Fresh is best.
  • 1 teaspoon Garlic Powder Substitute with fresh garlic if preferred.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Adjust according to taste.
For the Creamy Avocado Sauce
  • 1 medium Avocado Ripe for best texture.
  • 1/2 cup Greek Yogurt Plain variety works best.
  • 1 tablespoon Lemon Juice Fresh for best flavor.
  • 1/2 teaspoon Salt Season to taste.
  • 1/2 teaspoon Pepper Season to taste.

Method
 

Steps
  1. Preheat your oven to 375°F (190°C).
  2. Flake the fresh salmon into small pieces in a large bowl.
  3. Add breadcrumbs, a beaten egg, chopped herbs, lemon juice, garlic powder, salt, and pepper. Mix gently.
  4. Wet your hands and scoop portions of the mixture, rolling into 1-inch balls. Place on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes until golden brown and firm to touch.
  6. Blend ripe avocados, Greek yogurt, lemon juice, salt, and pepper until smooth for the sauce.
  7. Serve the warm salmon balls with the creamy avocado sauce for dipping.
