- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the frozen meatballs, cooking them for 5-7 minutes until golden brown.
- Add 1 can of whole tomatoes, breaking them up, along with 1 can of drained cannellini beans and 1 cup of quartered artichoke hearts. Stir in 2 teaspoons of Italian seasoning and pour in 1 cup of chicken broth. Bring to a boil.
- Once boiling, break the spaghetti into halves or thirds and stir into the sauce. Cover and let come back to a gentle boil for 1-2 minutes.
- Reduce heat to low, cover the skillet, and let it simmer for 10-12 minutes, stirring occasionally.
- Stir in ¼ cup of chopped parsley and lemon juice. Mix well and allow flavors to meld for a couple of minutes.
- Ladle the mixture into bowls and top with grated Parmesan cheese if desired.
