- In a large bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add the chicken thighs and let marinate for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat. Cook chicken thighs for 5 to 7 minutes per side until cooked through.
- Remove chicken from heat, allow to rest for 5 minutes, then slice into thin strips.
- Warm the corn tortillas in a skillet over medium heat for 20 to 30 seconds on each side.
- Assemble tacos with sliced chicken, chopped onions, cilantro, and a squeeze of lime. Add optional ingredients as desired.
