Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken Thighs can substitute with chicken breasts
  • 1 tablespoon Lime Juice use fresh for best flavor
  • 2 tablespoons Olive Oil or vegetable oil as substitute
  • 3 cloves Garlic minced; fresh is recommended
  • 1 teaspoon Cumin no direct substitution
  • 1 teaspoon Chili Powder adjust according to spice preference
  • 1 teaspoon Smoked Paprika sweet paprika can be used
  • 1 teaspoon Dried Oregano thyme can be a substitute
  • to taste Salt
  • to taste Pepper
For the Tacos
  • 8 pieces Soft Corn Tortillas flour tortillas can be used as alternative
  • 1 cup Chopped White Onion red onion is a milder option
  • 1 cup Chopped Fresh Cilantro omit if desired
  • 2 pieces Lime Wedges for serving
Optional Add-Ons
  • 1 cup Sliced Avocado
  • 1/2 cup Crumbled Cotija Cheese optional for dairy-free
  • 1/2 cup Pickled Red Onions
  • 1/2 cup Salsa Verde

Method
 

Cooking Instructions
  1. In a large bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add the chicken thighs and let marinate for at least 30 minutes.
  2. Preheat a grill or skillet over medium-high heat. Cook chicken thighs for 5 to 7 minutes per side until cooked through.
  3. Remove chicken from heat, allow to rest for 5 minutes, then slice into thin strips.
  4. Warm the corn tortillas in a skillet over medium heat for 20 to 30 seconds on each side.
  5. Assemble tacos with sliced chicken, chopped onions, cilantro, and a squeeze of lime. Add optional ingredients as desired.
