Cooking Steps
  1. Preheat your oven to 375°F (190°C). Gather your mixing bowls and other ingredients.
  2. In a large mixing bowl, combine the ground beef, chopped onion, fresh cilantro, minced jalapeño, garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix thoroughly.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips into the beef mixture. Ensure that the cheese is well distributed.
  4. Pour in the beaten egg and mix until the mixture is cohesive and sticks well. Aim for a uniform texture.
  5. Shape the mixture into golf-ball-sized meatballs—about 1.5 inches in diameter. Place them on a plate as you work.
  6. Heat olive oil in an ovenproof skillet over medium heat until shimmering. Add the meatballs, searing them for about 5 minutes until browned.
  7. Pour the Mexican-style tomatoes with green chilies over and around the meatballs, ensuring the sauce covers the bottom of the skillet.
  8. Transfer the skillet to your preheated oven and bake for 15-20 minutes, or until the meatballs are fully cooked.
  9. Remove from the oven and let the Spicy Mexican Donkey Balls cool for a few minutes. Serve garnished with fresh lime wedges.
