Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season the chicken breasts or thighs generously with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil and brown the chicken for 4 minutes on each side.
  4. Whisk together the brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch to create the glaze.
  5. Transfer the browned chicken to the baking dish, scatter pineapple, and pour glaze over the top.
  6. Cover with foil and bake for 25 to 30 minutes, until chicken reaches 165°F (74°C).
  7. Remove the foil and bake uncovered for an additional 5 to 10 minutes to caramelize the glaze.
  8. Let the chicken rest for 5 minutes before garnishing with green onions or reserved pineapple and serve.
