Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. Season the chicken with salt, pepper, and garlic powder, ensuring even coating.
  3. In a skillet, heat olive oil and brown the seasoned chicken pieces for about 4 minutes on each side.
  4. Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth to create the glaze.
  5. Transfer the browned chicken to the prepared baking dish. Scatter pineapple chunks over the chicken and pour the glaze on top.
  6. Cover with aluminum foil and bake for 25 to 30 minutes until chicken reaches 165°F (74°C).
  7. Remove foil and bake for an additional 5 to 10 minutes to caramelize the glaze.
  8. Let the chicken rest for 5 minutes before garnishing with green onions or additional pineapple before serving.
