Method
 

Steps
  1. In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, and cornstarch to create a marinade. Add chicken, coat well, and let marinate for at least 15 minutes.
  2. Chop scallions and mince garlic and ginger while the chicken marinates.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  4. Add marinated chicken to the skillet and cook for 5-7 minutes on each side until golden brown and juices run clear.
  5. Stir in minced garlic, ginger, and chopped scallions, sautéing for 2-3 minutes until fragrant.
  6. Pour in any leftover marinade, simmer for a few minutes until the sauce thickens.
  7. Remove from heat, let chicken rest before slicing. Serve over rice or noodles with scallion sauce.
