  • 1 tbsp Ground Cumin Offers warm spice balance.
  • 1 tbsp Dried Oregano Swapping in fresh oregano brightens the dish.
  • 1/4 tsp Cayenne Pepper Optional for an additional kick.
  • 2 tbsp Lemon Juice Fresh juice elevates the marinade.

Equipment

  • grill
  • mixing bowl
  • skewers

Method

Step-by-Step Instructions
  1. Prepare the Marinade: Whisk together melted unsalted butter, minced garlic, smoked paprika, chili powder, ground cumin, dried oregano, cayenne pepper, salt, black pepper, and fresh lemon juice until smooth.
  2. Marinate the Chicken: Add chicken thighs to the marinade, coating fully. Cover and refrigerate for at least 1 hour, ideally 2 to 4 hours.
  3. Preheat the Grill: Heat grill to medium-high, around 375°F to 450°F (190°C to 232°C). Brush grates with oil to prevent sticking.
  4. Assemble the Skewers: Thread the marinated chicken onto skewer, leaving space for even cooking. Soak wooden skewers in water for 30 minutes if using.
  5. Grill the Skewers: Cook skewers for 4 to 5 minutes on each side until chicken reaches 165°F (75°C). Look for golden-brown char.
  6. Brush with Butter: During the last minute of grilling, brush skewers with remaining melted butter or marinade.
  7. Garnish and Serve: Remove from grill, let rest, and garnish with chopped parsley. Serve with a tangy dipping sauce.
