Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a bowl, whisk together milk and lightly beaten eggs until combined.
  3. Stir in panko bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper into the wet mixture.
  4. Sauté minced garlic in olive oil until fragrant, then add to the mixture along with the parsley.
  5. Gently fold in ground chicken until just combined.
  6. Shape the mixture in the loaf pan, brush with melted butter, and sprinkle with garlic powder and extra Parmesan.
  7. Pour chicken broth around the base of the meatloaf in the pan.
  8. Bake for 60-70 minutes, until an internal temperature of 165°F (74°C) is reached.
  9. Let the meatloaf rest for 10-15 minutes before slicing.
