Ingredients
  

For the Filling
  • 8 ounces Feta Cheese crumbled
  • 8 ounces Kefalograviera Cheese grated
  • 1 teaspoon Pepper freshly cracked
For the Assembly
  • 12 sheets Phyllo Sheets defrosted
  • 1/2 cup Olive Oil

Method
 

Preparation Steps
  1. In a mixing bowl, combine crumbled feta cheese and grated kefalograviera, adding freshly cracked pepper. Blend until mixed.
  2. Lay a phyllo sheet on a surface and brush with olive oil. Sprinkle with cheese mixture.
  3. Layer another phyllo sheet on top, brush with olive oil and add cheese mixture. Repeat with a total of three sheets.
  4. Roll the phyllo sheets tightly from the long side into a log shape, tucking in ends.
  5. Wrap the log in plastic wrap and freeze for at least an hour.
  6. Preheat oven to 350°F (175°C). Let logs sit for 10 minutes after freezing for easier slicing.
  7. Slice the logs into 1-inch pieces and arrange cut-side up on a greased baking pan.
  8. Bake for 20-30 minutes until golden brown.
