Preparation Steps
- In a mixing bowl, combine crumbled feta cheese and grated kefalograviera, adding freshly cracked pepper. Blend until mixed.
- Lay a phyllo sheet on a surface and brush with olive oil. Sprinkle with cheese mixture.
- Layer another phyllo sheet on top, brush with olive oil and add cheese mixture. Repeat with a total of three sheets.
- Roll the phyllo sheets tightly from the long side into a log shape, tucking in ends.
- Wrap the log in plastic wrap and freeze for at least an hour.
- Preheat oven to 350°F (175°C). Let logs sit for 10 minutes after freezing for easier slicing.
- Slice the logs into 1-inch pieces and arrange cut-side up on a greased baking pan.
- Bake for 20-30 minutes until golden brown.
