  • 2 tablespoons Ranch Seasoning Feel free to use homemade seasoning.
  • 2 cloves Garlic Minced, fresh is preferred.
  • 1.5 lbs Chicken Tenderloins Can substitute with chicken breast or thigh.
For the Sauce
  • 0.5 cup Cilantro Roughly chopped; can be omitted.
  • 1 medium Poblano Pepper Roughly chopped; substitute with jalapeño for more spice.
  • 1 medium Avocado Make sure it’s ripe.
  • 1 medium Tomatillo Quartered; green tomatoes can be a substitute.
  • 1 medium Lime Juiced; lemon juice can be a substitute.
  • Salt Season to taste.
  • Pepper Season to taste.

Method
 

Preparation Steps
  1. Soak six wooden skewers in water for at least 30 minutes.
  2. In a mixing bowl, whisk together the ranch dressing, ranch seasoning, and minced garlic until well combined.
  3. Cut the chicken tenderloins into bite-sized chunks and add to the marinade, stirring gently.
  4. Preheat your oven to medium broil and line a baking sheet with foil.
  5. Thread the marinated chicken pieces onto the soaked skewers.
  6. Broil the chicken for 25 to 30 minutes, flipping every 10 minutes for even cooking.
  7. In a blender, combine ranch dressing, cilantro, poblanos, avocado, tomatillo, lime juice, salt, and pepper and blend until smooth.
  8. Remove the chicken from the oven and let it rest briefly before serving with the sauce.
