Step-by-Step Instructions for Kabob Rolls
- Preheat your oven to 475°F, positioning the rack about 6 inches below the heating element. Soak the wooden skewers in water for at least 20 minutes to prevent burning during cooking.
- In a large mixing bowl, combine the ground beef, chopped onion, finely chopped tomatoes, parsley, minced garlic, dried oregano, thyme, rosemary, dill weed, salt, and pepper. Mix thoroughly.
- Lay out the tortillas and spread the beef mixture evenly across each, then roll each tortilla into a tight log and wrap them in plastic wrap. Refrigerate for at least 20 minutes.
- Unwrap the tortillas and slice each log into 1-inch pinwheels. Thread the pinwheels onto the soaked skewers, arranging them with the cut sides facing outward.
- Arrange the skewered kabob rolls on a greased baking sheet and bake for 5 minutes on each side. Broil for an additional 1-2 minutes on each side until crispy and golden brown.
- Let them cool slightly, garnish with remaining parsley, and serve with tzatziki sauce for dipping.
