Step-by-Step Instructions for Kabob Rolls
  1. Preheat your oven to 475°F, positioning the rack about 6 inches below the heating element. Soak the wooden skewers in water for at least 20 minutes to prevent burning during cooking.
  2. In a large mixing bowl, combine the ground beef, chopped onion, finely chopped tomatoes, parsley, minced garlic, dried oregano, thyme, rosemary, dill weed, salt, and pepper. Mix thoroughly.
  3. Lay out the tortillas and spread the beef mixture evenly across each, then roll each tortilla into a tight log and wrap them in plastic wrap. Refrigerate for at least 20 minutes.
  4. Unwrap the tortillas and slice each log into 1-inch pinwheels. Thread the pinwheels onto the soaked skewers, arranging them with the cut sides facing outward.
  5. Arrange the skewered kabob rolls on a greased baking sheet and bake for 5 minutes on each side. Broil for an additional 1-2 minutes on each side until crispy and golden brown.
  6. Let them cool slightly, garnish with remaining parsley, and serve with tzatziki sauce for dipping.
