  1. In a large mixing bowl, combine the ground beef or lamb with the grated onion, chopped parsley, minced garlic, and the spices—cumin, allspice, salt, pepper, and cayenne. Use your hands to mix thoroughly until the mixture is well combined and slightly sticky.
  2. Dampen your hands with a little water to prevent sticking, then form the mixture into small logs or patties, each about 4 inches long and 1 inch thick.
  3. Preheat your grill to medium-high, reaching around 375°F (190°C), or heat olive oil in a skillet over medium heat until it shimmers.
  4. Carefully place the shaped kafta onto the grill or into your preheated skillet. Cook for about 4-5 minutes on each side, or until they develop a beautifully browned crust.
