  • 1 cup Italian Flat Leaf Parsley Curly parsley works as a substitute
  • 1/2 cup Fresh Cilantro Can be omitted or substituted with green onions
  • 1 teaspoon Salt Adjust according to taste
  • 1 teaspoon Coarsely Ground Black Pepper Freshly ground is best
  • 2 tablespoons Red Wine Vinegar White wine or apple cider vinegar are substitutes
  • 1/2 cup Extra Virgin Olive Oil Avocado oil can be lighter alternative

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Spread the meatballs on a baking sheet and bake for about 20 minutes until heated through.
  2. Chop the garlic in a food processor until finely chopped.
  3. Add parsley, cilantro, salt, and pepper to the processor and pulse until the herbs are finely chopped.
  4. Pour in red wine vinegar and slowly drizzle in olive oil while pulsing until combined.
  5. After the meatballs are done, transfer them to a bowl and mix with more than half of the chimichurri sauce.
  6. Plate the meatballs and drizzle with remaining chimichurri sauce before serving.
