- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté until translucent, about 5 minutes. Stir in 3 minced garlic cloves and cook for an additional minute.
- Introduce 10 ounces of sliced mushrooms to the skillet. Cook for 8–10 minutes, stirring occasionally until browned and moisture is released.
- Sprinkle in 1 teaspoon of dried thyme, 1 teaspoon of oregano, and salt and pepper to taste. Pour in ½ cup of white wine and let it simmer for 2–3 minutes until mostly evaporated. Then, add 1 cup of halved grape tomatoes and cook for an additional 2–3 minutes.
- In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in ¼ cup of flour, stirring for 2–3 minutes until golden. Gradually pour in 2 cups of warmed milk, stirring for 5–7 minutes until the sauce thickens.
