Step-by-Step Instructions
- In a large mixing bowl, combine the ground chicken, finely chopped rosemary, zesty lemon peel, breadcrumbs, beaten egg, minced garlic, salt, and black pepper. Mix thoroughly for about 2-3 minutes.
- Divide the mixture into equal portions, about the size of a golf ball, and gently shape each into patties approximately 3 inches in diameter.
- Place a large skillet on medium heat and add about 2 tablespoons of olive oil. Heat for approximately 1-2 minutes.
- Carefully add the shaped patties to the skillet. Cook for 4-5 minutes on each side until golden brown and fully cooked.
- Check that the internal temperature of each patty reaches at least 165°F (75°C) using a meat thermometer.
- Transfer the patties onto a plate lined with paper towels to drain excess oil. Let them rest for about 2 minutes.
- Serve the patties garnished with fresh rosemary sprigs and alongside lemon wedges.

Notes
Mix evenly to enhance flavor, don't overcrowd the skillet while cooking for optimal texture, and always check the internal temperature for safety. Use fresh ingredients for best results.
