Method
 

Preparation Steps
  1. Preheat your oven to 200°C (about 400°F) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together one egg, a pinch of sea salt, black pepper, curry powder, and the mashed sweet potato. Gradually add wheat flour and dried thyme until well combined.
  3. Using a scoop, portion the sweet potato mixture onto the prepared baking sheet and flatten to form patties about 1.5 cm thick.
  4. Melt butter and brush it over the tops of the patties. Bake for about 15 minutes until the edges are golden and crispy.
  5. Flip each patty and brush more melted butter on top. Return to oven and bake for an additional 10 minutes until browned and crispy.
  6. Mix mayonnaise with your choice of mixed dried herbs in a small bowl for the herb mayo.
  7. Let the patties cool slightly before serving with herb mayo on the side.
