Preparation Steps
- Preheat your oven to 200°C (about 400°F) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, whisk together one egg, a pinch of sea salt, black pepper, curry powder, and the mashed sweet potato. Gradually add wheat flour and dried thyme until well combined.
- Using a scoop, portion the sweet potato mixture onto the prepared baking sheet and flatten to form patties about 1.5 cm thick.
- Melt butter and brush it over the tops of the patties. Bake for about 15 minutes until the edges are golden and crispy.
- Flip each patty and brush more melted butter on top. Return to oven and bake for an additional 10 minutes until browned and crispy.
- Mix mayonnaise with your choice of mixed dried herbs in a small bowl for the herb mayo.
- Let the patties cool slightly before serving with herb mayo on the side.
