  • 1 tsp Kosher Salt Sea salt works as an alternative
  • 2 tbsp Olive Oil Avocado oil can be used
  • 1 Lemon Fresh slices for roasting
For the Herby Slaw
  • 1 cup Plain Yogurt Greek or non-dairy yogurt optional
  • 1 tbsp Dill Fresh herbs preferred
  • 1 tbsp Parsley Fresh herbs preferred
  • 1 tbsp Chives Fresh herbs preferred
  • 2 cups Green Cabbage Shredded, coleslaw mix can substitute
For Assembly
  • 4 Pitas Any flatbread will work
  • 1 medium Avocado Can be omitted

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the chicken with all spices, olive oil, and lemon slices.
  2. Spread the chicken and lemon slices on a sheet pan in a single layer. Roast for 15 minutes, toss, and cook for another 4-7 minutes until golden brown.
  3. While the chicken roasts, mix yogurt, dill, parsley, chives, lemon juice, olive oil, and salt for the slaw. Fold in cabbage and let sit for 10-15 minutes.
  4. Warm the pitas, then fill with slaw, roasted chicken, and avocado. Serve on a platter.
