Preparation Steps
  1. Begin by cutting 4-5 ripe peaches in half and removing the pits. Slice them into ½ inch thick pieces, leaving the skin on.
  2. In a medium saucepan, combine the sliced peaches, 4 cups of water, and your preferred amount of stevia sweetener. Heat until it reaches a gentle boil, stirring occasionally.
  3. Once boiling, reduce the heat to a low simmer and leave uncovered for 5 minutes. Remove from heat and let cool for 10 minutes.
  4. Transfer the cooled peach mixture into a blender and blend until smooth. Pour the peach puree into a container to chill in the refrigerator.
  5. Position a fine mesh strainer over a pitcher. Pour the puree through the strainer to separate the liquid from the pulp.
  6. Into the strained peach juice, stir in 1 cup of freshly squeezed lemon juice. Mix thoroughly and taste to adjust sweetness as needed.
  7. Refrigerate the lemonade for at least 30 minutes before serving. When ready, fill glasses with ice and pour your Skinny Peach Lemonade over it. Garnish with mint and peach slices.
