  1. Preheat your air fryer to 400°F (200°C). Wash and cut the red potatoes into bite-sized cubes. Toss in a bowl with olive oil, salt, and pepper. Cook in the air fryer for 16–18 minutes until crispy.
  2. Heat a skillet over medium-low heat with a splash of olive oil. Add the diced onions and cook for 10–15 minutes until soft and golden.
