- Preheat your smoker to 250°F (121°C).
- Place the whole jalapenos on the smoker grates and smoke for about 30 minutes.
- Remove the jalapenos and slice them into ⅛-inch rings, removing seeds if desired.
- In a medium pot, combine equal parts water and white vinegar with salt, sugar, bay leaf, oregano, and thyme. Heat until boiling, stirring to dissolve salt and sugar.
- Pack the sliced jalapenos into a clean 1-quart mason jar and pour the hot brine over them.
- Cool to room temperature, then refrigerate for at least 8 hours before enjoying.
