  2. Stir in 3 cups of shredded or diced chicken, allowing it to warm for a minute. Add 1-2 chopped chipotle peppers and a tablespoon of adobo sauce, mixing well.
  3. Pour in 3 cups of chicken broth and 1 cup of heavy cream, scraping any browned bits. Bring this mixture to a gentle simmer.
  4. Once simmering, add 12 ounces of uncooked pasta, ensuring it’s fully submerged. Cover and cook for 10-12 minutes, stirring occasionally.
  5. Reduce the heat to low and add 1.5-2 cups of shredded cheddar cheese, stirring until melted and blended into the sauce.
  6. Taste and adjust salt and pepper; let sit off the heat for about 2 minutes, then serve hot.
