Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add sausage and cook until browned, about 5–7 minutes.
  2. In the same skillet, add cooked hash browns and whisked eggs, cooking together on medium-low for 3–5 minutes.
  3. Warm tortillas in a dry skillet or microwave, spoon about ¼ cup of filling into each and roll tightly.
  4. In a saucepan, melt reserved sausage fat, whisk in flour, gradually add milk until thickened.
  5. Preheat oven to 350°F (175°C), pour gravy over enchiladas in a greased baking dish, cover, and bake for 25 minutes.
  6. Remove foil and bake uncovered for an additional 10 minutes until bubbly and slightly brown.
  7. Let rest for about 5 minutes, serve warm, garnished with cheese or fresh herbs.
