  • 1 cup pecans or substitute with walnuts

  • 1 cup pecans for the topping
  • 2 tablespoons maple syrup to drizzle over topping

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Combine sweet potatoes with olive oil, cinnamon, and nutmeg in a large bowl. Toss until coated.
  3. Spread sweet potatoes on the baking sheet and roast for 50-60 minutes until tender and charred.
  4. Lower the oven temperature to 375°F (190°C) and grease a 9x13 baking dish.
  5. In a mixing bowl, combine roasted sweet potatoes with almond milk, vanilla, brown sugar, and maple syrup.
  6. Assemble the casserole by pouring sweet potato mixture into the baking dish, dot with butter, and add marshmallows.
  7. Mix pecans with maple syrup and sprinkle over the sweet potato filling.
  8. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 15 minutes.
  9. Let cool slightly before serving.
