Preparation Steps
- Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Combine sweet potatoes with olive oil, cinnamon, and nutmeg in a large bowl. Toss until coated.

- In a mixing bowl, combine roasted sweet potatoes with almond milk, vanilla, brown sugar, and maple syrup.
- Assemble the casserole by pouring sweet potato mixture into the baking dish, dot with butter, and add marshmallows.
- Mix pecans with maple syrup and sprinkle over the sweet potato filling.
- Cover with foil and bake for 15 minutes, then uncover and bake for an additional 15 minutes.
