Ingredients
  

For the Bars
  • 2 cups fresh grated carrots provides natural sweetness and moisture
  • 2 cups medium zucchini be sure to core larger ones
  • 1 cup brown sugar or substitute with coconut sugar
  • 3 eggs must be at room temperature
  • 1/2 cup honey adds sweetness and moisture
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 cups all-purpose flour spoon-and-level method recommended
  • 1 tsp baking powder ensure it's fresh
  • 1 tsp baking soda ensure it's fresh
  • 1 tsp ground ginger adjust to taste
  • 1 tsp cinnamon adjust to taste
For the Lemon Cream Cheese Frosting
  • 8 oz cream cheese must be softened
  • 1 tbsp lemon zest for brightness
  • 2 cups powdered sugar adjust for preferred sweetness

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Prepare a 13x9x2-inch baking pan by leaving it ungreased.
  2. In a large mixing bowl, whisk together the eggs, brown sugar, vegetable oil, honey, and vanilla extract until fully combined.
  3. Gently fold in the grated carrots and zucchini into the wet mixture, along with any nuts if desired.
  4. In a separate bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and baking soda.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Spread the batter evenly into your ungreased baking pan.
  7. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove the pan from the oven and let the bars cool completely on a wire rack.
  9. In a medium bowl, beat together the softened cream cheese, lemon zest, and powdered sugar until fluffy.
  10. Once the bars are completely cooled, spread the lemon cream cheese frosting evenly over the top.
  11. Cut the bars into squares or rectangles and serve.
