- Preheat your oven to 350°F (175°C). Prepare a 13x9x2-inch baking pan by leaving it ungreased.
- In a large mixing bowl, whisk together the eggs, brown sugar, vegetable oil, honey, and vanilla extract until fully combined.
- Gently fold in the grated carrots and zucchini into the wet mixture, along with any nuts if desired.
- In a separate bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and baking soda.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Spread the batter evenly into your ungreased baking pan.
