  • 1 can coconut milk almond milk or cashew cream can be used
  • 2 tablespoons olive oil any neutral oil will work well
  • 1 medium onion yellow, white, or red onions can be used
  • 4 cloves garlic fresh garlic is recommended but can use garlic powder
  • 1 tablespoon fresh ginger dried ginger can be used, adjust amount downwards
  • 1 tablespoon chili paste adjust according to spice tolerance
  • 1 teaspoon ground cumin coriander is a possible substitute
  • 1 teaspoon paprika use cayenne for extra spice if desired
  • to taste salt adjust according to preference
  • to taste black pepper adjust according to preference
For the Garnish
  • 1/4 cup fresh cilantro omit or substitute with parsley if desired
  • 2 tablespoons lime juice lemon juice can be used as a substitute

Step-by-Step Instructions
  1. In a large bowl, combine the chicken thighs with coconut milk, olive oil, chopped onion, minced garlic, grated ginger, chili paste, ground cumin, paprika, salt, and pepper. Mix thoroughly until the chicken is well-coated. Allow to marinate for at least 1 hour or overnight.
  2. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with oil.
  3. Transfer the marinated chicken along with all the marinade into the greased baking dish. Spread the chicken in a single layer.
  4. Bake for about 35–40 minutes, until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes. Squeeze fresh lime juice over the top and garnish with chopped cilantro before serving.
