  • 1 package Cole Slaw Mix Pre-packaged mix saves prep time
  • 2 cups Corn Fresh or thawed frozen
  • 1 medium Jalapeño Seeds removed for a milder slaw
  • 1/4 cup Cilantro Chopped, adjust to taste
  • 2 stalks Green Onions Sliced
For the Dressing
  • 1/2 cup Mayonnaise Can use Greek yogurt as a substitute
  • 2 tablespoons Lime Juice Essential for flavor
  • 1 tablespoon Sugar Adjust to taste
  • 1 teaspoon Garlic Powder Can substitute with fresh minced garlic
  • to taste Salt & Pepper Essential seasonings

Method
 

Preparation
  1. In a large mixing bowl, combine cole slaw mix, corn, minced jalapeño, chopped cilantro, and sliced green onions. Stir gently until well mixed.
  2. In a separate bowl, whisk together mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until creamy.
  3. Pour the dressing over the vegetable mixture and gently fold until evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Toss before serving and enjoy!
