  • 26 cookies Vanilla Cream Cookies Crushed finely for best texture
  • 1/2 cup Butter Melted, unsalted
For the Cheesecake Filling
  • 1 box Strawberry Gelatin Powder Can substitute with raspberry for a different flavor
  • 1 cup Boiling Water For dissolving the gelatin
  • 8 oz Cream Cheese Softened
  • 1/2 cup Granulated Sugar Adjust to taste
  • 1 cup Heavy Cream Freshly whipped
  • 1/4 cup Powdered Sugar
For the Topping
  • 10 cookies Strawberry Wafer Cookies Crushed for topping
  • 1 drop Food Coloring Optional, for visual appeal

Method
 

Prepare the Crust
  1. Process 26 vanilla cream cookies into fine crumbs. Mix the crumbs with melted unsalted butter and press into a greased 10-inch springform pan. Freeze for 15 minutes.
Dissolve Gelatin
  1. Combine strawberry gelatin powder with 1 cup of boiling water, stirring until dissolved. Allow to cool to room temperature.
Mix Cream Cheese
  1. Beat softened cream cheese with granulated sugar until smooth. Set aside.
Whip Cream
  1. Whip heavy cream with powdered sugar until stiff peaks form. Fold half into the cream cheese mixture and the remaining into the cooled gelatin.
Layer Ingredients
  1. Pour half of the gelatin mixture over the crust, freeze for 15 minutes, then spread the cream cheese mixture. Add the remaining gelatin mixture.
Add Topping
  1. Crush remaining cookies and mix with food coloring. Sprinkle over the cheesecake. Cover and refrigerate for at least 4 hours or overnight.
