Prepare the Crust
- Process 26 vanilla cream cookies into fine crumbs. Mix the crumbs with melted unsalted butter and press into a greased 10-inch springform pan. Freeze for 15 minutes.
Dissolve Gelatin
- Combine strawberry gelatin powder with 1 cup of boiling water, stirring until dissolved. Allow to cool to room temperature.
Mix Cream Cheese
- Beat softened cream cheese with granulated sugar until smooth. Set aside.
Whip Cream
- Whip heavy cream with powdered sugar until stiff peaks form. Fold half into the cream cheese mixture and the remaining into the cooled gelatin.
Layer Ingredients
- Pour half of the gelatin mixture over the crust, freeze for 15 minutes, then spread the cream cheese mixture. Add the remaining gelatin mixture.
Add Topping
- Crush remaining cookies and mix with food coloring. Sprinkle over the cheesecake. Cover and refrigerate for at least 4 hours or overnight.
