For the Salad
  • 2 cups Strawberries Use any ripe strawberries

  • 1/2 medium Red Onion Sliced thin
  • 1 can Mandarin Oranges Can substitute with fresh oranges
  • 1 cup Feta Cheese Can use goat cheese or cheddar
  • 1/2 cup Pecans Can swap for walnuts or slivered almonds
For the Dressing
  • 1/2 cup Poppy Seed Dressing (Bitten Lemon) Can use homemade or other fruit dressings

Method
 

Pasta Preparation
  1. Bring a large pot of salted water to a rolling boil over high heat. Once boiling, add bowtie pasta and cook according to package instructions, usually about 8–10 minutes, until al dente. Drain the pasta in a colander and rinse it under cold water to stop the cooking process. Set it aside to cool completely.
Salad Assembly
  1. In a large mixing bowl, combine your cooled bowtie pasta with sliced strawberries, halved red grapes, thinly sliced red onion, and fresh spinach leaves. Add drained mandarin oranges and crunchy pecans. Finally, crumble in the feta cheese.
Dressing and Serving
  1. Drizzle a generous amount of poppy seed dressing over the salad mixture and toss everything together until fully combined. Chill for at least 30 minutes before serving.
