Step-by-Step Instructions for Strawberry Matcha Sago
  1. Bring about 4 cups of water to a rolling boil in a medium saucepan. Add 1 cup of sago pearls, stir gently, and reduce heat to a simmer. Cook for about 15 minutes until mostly transparent, cover and let sit for 10-15 minutes.
  2. Strain the cooked sago using a fine mesh sieve and rinse thoroughly under cold water. Transfer to a bowl filled with water to prevent it from sticking together.
  3. In a heat-proof bowl, sift 2 tablespoons of matcha powder, then whisk with 1 cup of hot water (176°F or 80°C) until frothy. Gradually mix in 1 cup of milk until fully incorporated.
  4. In a large mixing bowl, combine cooled sago, 1 cup of evaporated milk, ½ cup of condensed milk, and your prepared matcha milk. Fold in 1 cup of diced strawberries and ½ cup of coconut jelly. Add crushed ice if desired.
  5. Spoon the mixture into individual cups or bowls. For a beautiful presentation, layer the ingredients and garnish with extra strawberry slices. Enjoy immediately!
